Trinidad State — Future Planning: Getting ready to celebrate school’s 100th anniversary in 2025

As many of you know, Trinidad State College has conducted a thorough review of its physical facilities to identify and prioritize campus renovation needs. is major undertaking has led to the creation of a Facilities Master Plan (FMP), which offers a blueprint for projects and campus improvements the college will prioritize over the next 10 years.

Make a beef & cabbage meal for dinner tonight!

Black Pepper Beef & Cabbage 1 tablespoon whole black peppercorns, coarsely crushed with the bottom of a cup or pan 3 garlic cloves, grated 2 teaspoons light brown sugar 1 teaspoon cornstarch Kosher salt 3/4 pound sirloin steak, thinly sliced crosswise 3 tablespoons sunflower oil or other neutral oil 2 tablespoons soy sauce 1/2 head small green cabbage (about 8 ounces), thinly sliced 1 tablespoon sherry vinegar 1 tablespoon toasted sesame seeds, crushed with your fingertips 2 scallions, thinly sliced Cooked rice, for serving Add peppercorns, garlic, brown sugar, cornstarch and 1 teaspoon salt to a medium bowl and stir to combine. Add sliced steak and toss to coat.

Growing up with a cabbage cooking German grandma, I learned early in life to love this beautiful veggie. Her food was always so tasty, it never occurred to me to question whether or not I’d like to eat whatever she was cooking. We were taught to eat what was served to us and be grateful for it and that most definitely included cabbage — of both the red and green varieties.

DENVER — The Colorado Department of Human Services is celebrating Feb. 1 as National Energy Assistance Day. All poten tially eligible Coloradans are encouraged to apply for Colorado’s Low-income Energy Assistance Program (LEAP), a federally funded program that helps eligible Coloradans pay a portion of their winter home heating costs.
