Mother’s Day Brunch
Two of my favorite weekend brunch items are breakfast burritos and breakfast casseroles. These menu staples are perfect for family gatherings or plans that include overnight guests. If you’re trying to decide what to serve your mother for her upcoming day, these are two wonderful and delicious options to consider.
What a difference a day makes!
Springtime in the Rocky Mountains is always an interesting combination of perfectly gorgeous blue sky and sunshine, hurricane-force winds, rain, snow and everything in between days. So, like Will Rogers once said, “If you don’t like our weather, just wait a few minutes.” That’s certainly been true this week here in Trinidad. Baked Breakfast Burritos 1 package (16 oz.) frozen cubed hash brown potatoes 12 eggs 1 large onion, chopped 1 medium green pepper, 1 medium green pepper, chopped 1/2 lb. pork sausage, browned and drained 12 flour tortillas, warmed 3 cups (12 oz.) Cheddar 3 cups (12 oz.) Cheddar cheese shreds Salsa, optional In a large skillet, fry hash browns according to package directions; remove and set aside.

TEEN SON STRUGGLES AFTER FAMILY’S MOVE TO NEW STATE
DEAR ABBY: Because of frustration with our state’s substantial COVID restrictions and our teen son’s struggles with remote learning, we moved to another state. At the time, our son was excited to move (we kept asking him to make sure). However, we are now nearly through the school year and he still hasn’t made new friends. He’s depressed and wants to move back.
