Sun-Dried Tomato & Feta Stuffed Artichokes STUFFING: 2 1/4 cups coarse dry whole-wheat dry breadcrumbs, (see Note) 1 cup finely crumbled feta cheese 2/3 cup oil-packed sundried tomatoes, rinsed and finely chopped, rinsed and finely chopped 1/2 cup minced fresh basil 2 cloves garlic, minced 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper 1 tablespoon extra-virgin olive oil ARTICHOKES: 4 large artichokes, (2 1/2-3 1/2 pounds total) 6 teaspoons extra-virgin olive oil, divided 3 cloves garlic, minced 2 cups reduced-sodium chicken broth 1 tablespoon lemon juice Preheat oven to 375 degrees F. To prepare stuffing: Combine breadcrumbs, feta, tomatoes, basil, garlic, salt, pepper and oil in a medium bowl.

Colfax Co. downgrades evacuation statuses for three communities

Colfax County Sheriff’s Office announced Sunday that three communities previously under “Go” evacuation orders have been downgraded to “Set.” CCSO said that Hidden Lake, Black Lake Resort and Black Lake — all previously evacuated due to the Hermits Peak / Calf Canyon fires — were now under “Set” status and that residents could begin to repopulate the area 8 a.m. Sunday.

Spring snowstorm doesn’t do much for Trinidad, higher accumulations seen north

Trinidad saw no snow accumulation during last weekend’s spring snowstorm, according to the National Weather Service, yet the storm did cause issues for some southeast Colorado residents. Trinidad saw “lighter” accumulations — with 0.5 inches being tallied by the end of the storm — while areas to the north, including Huerfano County, saw snow accumulation reaching nearly a foot at 11.3 inches, NWS data shows.
