Education nonprofit opens rural teacher grant applications until end of September for Las Animas, Huerfano counties

Teachers in Las Animas and Huerfano counties are invited to apply for a “rural teacher grant” funded by the Nathan Yip Foundation — a Greenwood Village-based education nonprofit dedicated to funding rural education. The grant, which can be requested in amounts between $100 and $3,000, has a wide range of approved uses.

’Bout time for Soup Cool weather favorites for everyone’s taste

Roasted Tomato & Red Pepper Soup While the aroma of roasting peppers and the start of Bronco football season still linger happily in my mind, I find myself anticipating the many wonderful kitchen opportunities the days of autumn will bring — I’m simply enjoying the journey, so to speak. Now that the oven can be turned on again, without running everyone out of a hot house, my thoughts are roaming toward all kinds of roasted and baked goodies I love to prepare.

~ Great soups mean great meals & a happy family ~

Roasted Tomato & Red Pepper Soup 2 1/4 pounds tomatoes, halved lengthwise 2 large red bell peppers, quartered, seeded 1 onion, cut into thin wedges 4 large garlic cloves, peeled 2 tablespoons olive oil (preferably extra-virgin) 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried 2 cups (about) water 4 tablespoons part-skim ricotta cheese, room temperature Fresh thyme sprigs (optional) Preheat oven to 450 degrees F. Arrange tomatoes (cut side up), bell peppers, onion and garlic cloves on large baking sheet.

Health nonprofit expands to offer telehealth services in effort to bolster services of ‘underserved,’ ‘marginalized’ communities

A Colorado nonprofit known for organizing health fairs has rebranded and expanded its programming, allowing greater access for rural patients seeking healthcare. 9Health Fair, now known as 365 Health, will continue to offer its healthcare fairs, but will also offer telehealth services.
